the characteristics of the Langhe Nebbiolo doc:
100% produced with Nebbiolo grapes, in our case in the Langa area (Piemonte region), its name probably derives from the term fog (In italian fog mean Nebbia), referring to the one that surrounds the vineyards in the age of harvest, or perhaps to the appearance of the berries, "clouded" by the abundant bloom that covers them. The first written records of the Nebbiolo date back to the 13th century. Langhe Nebbiolo DOC is a red wine whose production is allowed in the province of Cuneo, in Piedmont. It has a light ruby red color tending to orange with aging. The scent is characteristic, with delicate fruity and floral notes. The taste is dry, velvety, full-bodied, sometimes lively. It goes perfectly with traditional Langhe dishes, such as Tajarin traditional local pasta, agnolotti, roast meats, boiled meats and typical Cuneo Alps cheeses as explained by the Italian food consultant Franca Demaria.

Il Nebbiolo Langhe DOC è un vino rosso la cui produzione è consentita nella provincia di Cuneo, in Piemonte. Si presenta di colore rosso rubino scarico tendente all'aranciato con l'invecchiamento. Il profumo è caratteristico, con delicate note fruttate e floreali, principalmente viola. Il sapore è secco, a volte amabile, vellutato, di buona corporatura. Si abbina perfettamente ai piatti della tradizione langarola e cuneese, come i primi di pasta ripiena (plin), gli agnolotti, ai Tajarin, gli arrosti, i bolliti e i formaggi tipici delle Alpi cuneesi, come ci spiega la consulente di cibo italiano Franca Demaria.
Oggi questo grande vino, dopo una attenta ricerca, grazie al gruppo Low Histamines, potrà anche essere consigliato a tutte quelle persone sensibili ai vini o intolleranti alimentari alle istamine, che bere un vino, specialmente rosso, può creare, come in passato ci ha speigato più volte il dottore, nutrizionista, Eugenio Franzero, mal di testa, emicrania, dermatiti, coliti ecc...Un vino che può rientrare in una dieta a basso contenuto di istamine senza perdere la sua qualità originale. I suggest to oxygenate the wine well in the glass, preferably a "Balloon glass" before it is tasted.
On the nose: very intense, fine, quite complex, frank, fruity, mainly hints of cherry, light berries.
On the palate: dry, quite warm, pleasant, fruity (mainly cherry with an aftertaste of almond), persistent.
A wine that immediately invades the palate with fresh red fruits creating a kind of enveloping softness and then finish, thanks to the obvious aftertaste of almond in a persistent dry persistence.
Ideal paired with fresh or cooked seasonal vegetables, pasta dishes, pizza, chicken and veal or even as an aperitif thanks to its non-invasive acidity and light and soft tannins.

suggerisco di osssigenare bene il vino nel bicchiere, meglio se un "Balloon" prima che venga degustato.
Al naso: molto intenso, fine, abbastanza complesso, franco, fruttato, principalmente sentore ciliegia, leggeri frutti di bosco.
Al palato: secco, abbastanza caldo, piacevole, fruttato (principalmente ciliegia con retrogusto di mandorla), persistente.
Un vino che da subito invade il palato con frutti rossi freschi creando una sorta di morbidezza avvolgente per poi terminare, grazie al retrogusto evidente della mandorla in una duratura persistenza secca.
Ideale abbinato con verdure di stagione sia fresche che cotte, primi piatti a base di pasta, pizza, carne di pollo e vitello o anche degustato come aperitivo grazie alla sua acidità non invadente e tannini leggeri e morbidi.

One of the problems in establishing the correlation between histamine and colitis is to define, as a starting point, whether the first is the cause or at least of the second or the opposite.
To date I do not think anyone can give a definite answer, but we have a basic histologic basis from which to develop our reasoning: in cases where we have a damage to the mucous membrane cells, this then in IBD (Chron and RCUE) is even more evident.
In particular, the inflammatory role associated with cellular immune response is evident.
We know that histamine is the chemical mediator of this altered immune response state, and then the doubt is what we started from: histamine is the cause or consequence of intestinal inflammatory diseases?
I prefer to leave the answer to colleagues who deal with this pathology from a clinical, histological and genetic point of view, and I want to devote myself to what competes for me: nutrition.
For those who like me have been involved in nutrition for so many years, there is no doubt about the correlation between intestinal inflammatory bowel disease and histamine, where eating disorders of this latter always have a "trigger" effect on triggering intestinal symptoms and maintaining them over time; For this reason, beyond medical and behavioral therapies, a proper dietary approach based on histamine-free protocols always produces very positive effects.
On the counter of the defendants there are always the same foods: seasoned cheese, mushrooms, chocolate, strawberries and alcohol, and among them in the first instance wine.
Wine is rightly eliminated in these diets as it is recognized as the major source of exogenous histamine and its absence always produces a rapid improvement in symptoms.
The problem for a dietician is always to find a proper balance between the patient's therapeutic needs and demands, who are less and less willing to give up their habits and why not even to the pleasures of the table.
For some years, I have successfully experimented with the use of low-histamine products, which allows me to use moderate, but constant, wine.
On the market for a long time there are wines where histamine is eliminated by chemical processes but, alas, the quality is heavily penalized.
The situation has radically changed with the introduction of Veglio Michelino & Figlio wines certified LOW HISTAMINES (Research carried out by international consulent and wine expert Sebastiano Ramello), where the product is chemically treated and results in a histamine regime of 0.3-0.4 mg  per liter versus 10 - 12 mg-liter of the average of the same wine, all obtained with absolutely natural processes.
Therefore, thanks to these LOW HISTAMINES certified products, I can say that I have reintroduced to a large proportion of patients with intestinal inflammatory diseases, a quantity of organoleptically excellent wine, about one glass a day without having observed a recrudescence of the typical symptoms of syndrome, thus increasing overall compliance with the dietary protocol to which patients are subjected.

Therefore, i can say that given the studies and tests carried out, Low Histamines certified wines have no contraindications except those of any other wines in the same quality, as the may reduce the problems of people suffering from histamines food intolerance.

IN TALIANO:

Uno dei problemi nello stabilire la correlazione tra istaminosi e colite è definire, come punto di partenza , se la prima è causa o quantomeno concausa della seconda o sia vero il contrario.
Ad oggi non credo nessuno possa dare una risposta certa, però abbiamo un dato istologico di base dal quale sviluppare il nostro ragionamento: in entrabi i casi abbiamo una danno alle cellule epiteliali della mucosa,  questo poi nelle IBD (Chron e RCUE ) risulta ancora più evidente.
In particolare risulta uno stato infiammatorio legato alla risposta immumitaria cellulomediata.
Sappiamo che l’istamina è il mediatore chimico di questo alterato stato di risposta immunitaria ed allora il dubbio risulta essere quello dal quale siamo partiti : l’istamina è causa o conseguenza delle malattie infiammatorie intestinali?
Preferisco lasciare la risposta ai colleghi, che si occupano di questa patologia dal punto di vista clinico, istologico e genetico e mi voglio dedicare a quello che mi compete : la nutrizione.
Per chi come me si occupa di nutrizione da tanti anni risulta indubbia la correlazione tra malattia infiammatoria intestinale ed istamina, dove eccessi alimentari di quest’ultima, hanno sempre un effetto “trigger” sullo scatenarsi della sintomatologia intestinale e sul mantenimento degli stessi nel tempo; per questo motivo al di là delle terapie mediche e comportamentali, un approccio dietologico corretto basato su protocolli con alimenti privi di istamina produce sempre effetti assai positivi.
Sul banco degli imputati ci sono sempre gli stessi alimenti : formaggi stagionati, funghi, cioccolato, fragole ed ,alcolici e tra questi in prima istanza il vino.
Il vino viene, giustamente, eliminato in queste diete in quanto riconosciuto come la maggiore fonte di istamina esogena e la sua assenza produce sempre un rapido miglioramento dei sintomi.
Il problema per un dietologo è sempre quello di trovare un corretto equilibrio tra necessità terapeutiche e richieste del paziente, che sempre meno è disposto a rinunciare alle sue abitudini e perché no anche ai piaceri della tavola.
Da alcuni anni ho sperimentato, con successo, l’utilizzo di prodotti a basso contenuto di istamina, grazie ai quali posso consentire ai mei pazienti un utilizzo moderato, ma costante di vino.
In commercio da parecchio tempo sono presenti vini dove l’istamina, viene eliminata con procedimenti chimici, ma ahimè la qualità ne risulta pesantemente penalizzata.
La situazione è radicalmente mutata, con l’introduzione dei vini dell’azienda Veglio Michelino e Figli certificati Low Histamines (Ricerca portata avanti dal consulente internazionale e esperto di vini Sebastiano Ramello), dove il prodotto è trattato non chimicamente e risulta con un regime di istamina di 0,3-0,4 mg litro contro i 10- 12 mg-litro della media di pari vitini, il tutto ottenuto con procedimenti assolutamente naturali.
Dunque, grazie a questi prodotti certificati Low Histamines, posso affermare di aver reintrodotto in una quota consistente di pazienti affetti da malattie infiammatorie intestinali, una quantità di vino, organoletticamente eccellente,  di circa un bicchiere al giorno senza aver osservato una recrudescenza dei sintomi tipici della sindrome, aumentando così la compliance generale al protocollo dietologico al quali i pazienti sono sottoposti.

Pertanto, posso affermare che dati gli studi e i test effettuati, con l'uso dei vini garantiti Low Histamines non si riscontrano controindicazioni se non quelle di qualsiasi altro vino, ma a parità di consumo contribuiscono nel diminuire i problemi di quelle persone che soffrono di istaminosi, intolleranza alimentare alle istamine

Le allergie sono una reazione immediata dell'organismo verso sostanze normalmente innoffensive, rappresentate dai composti alimentari qualsiasi.
Esiste un citotossico automatizzato e standardizzato "ALCT" che è un test sulle intolleranze alimentari approvato e riconosciuto dalla U.S. Food and Drugs Administration (FDA) e utilizzato nei dipartimenti di immunoematologia di alcune Università che può essere eseguito in un qualsiasi momento della giornata e non occorre il digiuno.

WHAT IS ISTAMINE?

FOODS CONTAINING ISTAMINE:

WINE AND ISTAMINE:

Esiste una relazione tra istamina e le intolleranze alimentari, per cui un vino che ne contenga poca può essere consumato a dosi ragionevoli, secondo la medicina nutrizionistica, evitando i danni dovuti alla presenza di elevati livelli di istamina. In effetti, numerose ricerche hanno posto in evidenza il fatto che il mal di testa e le emicranie siano causate proprio dalla presenza di istamina, i cui valori sono notoriamente alti all'interno di un vino rosso -.

ISTAMINA IN ACTION:

LA ISTAMINA IN AZIONE:

- Quando viene assunta in grandi quantità, la istamina è causa di:
  • Vasocostrizione delle grandi arterie, per aziione sulla muscolatura liscia (ipertensione)
  • Vasodilatazione delle arteriole per apertura degli sfinteri precapillari: ciò avviene di solito a livello locale, mentre se la vasodilatazione avviene a livello sistematico, abbiamo ipotensione.
  • Aumento della permeabilità dei capillari e delle venule post capillari con maggior afflusso di leucociti nella zona traumatizzata e infetta.
  • Broncocostrizione con contrazione delle cellule muscolari bronchiali, attacco di asma allergico.
Nella disbiosi, una flora intestinale alterata è responsabile di un'eccessiva decarbossilazione di tutti gli aminoacidi proteici, cioè della eccessiva decarbossilazione dell'istidina e istamina.

La istamina viene sequestrata soprattutto dai MASTOCITI che la rilasciano in seguito a stimolazioni.

Sono state riscontrate variazioni significative del Sistema Istmina in alcuni disordini neurologici, come L'ENCEFALOPATIA ALCOLICA DI WERNICKE, la malattia di Alzheimer, nelle encefalopatie tossiche, specie quelle da alcolici e da epatopatia croniche.

Inoltre, la istamina presente a livello dei neuroni è mediatrice della CINETOSI, disturbi vestibolari con interessamento dei centri del vomito e del tronco encefalico.


ISTAMINE, LOW AND HIGH LEVELS:

Low levels of histamine produce poor sexual desire, hyperactivity, anxiety, hallucinations and paranoia, bipolar disorder and manic depressive states, so Michael Lesser suggests that histamine be taken into account after the serotonin tests were unnecessary.

ISTAMINA, BASSI E ALTI LIVELLI:

Bassi livelli di istamina producono uno scarso desiderio sessuale, iperattività, ansia, allucinazioni e paranoie, disturbi bipolari e stati depressivi maniacali, per cui Michael Lesser suggerisce di prendere in considerazione la istamina, dopo che gli accertamenti sulla serotonina sono risultati inutili.

Elevati livelli di istamina sono presenti dei pazienti cefalici, per cui l'assunzione di cibi (tra cui il VINO) ricchi di istamina causano attacchi di cefalea che possono essere presenti solo nei soggetti vulnerabili -.

To start the "LOW HISTAMINES" wine search, about 6 years ago, was the international wine Consulting and expert Sebastiano Ramello, who first analyzed wines from wineries throughout Italy, including wines from the wine producer "Veglio Michelino & Figlio", finding that some wines of the winery "Veglio Michelino & Figlio" contained a quantity of average istamine below average (average content of histamine in a quality red wine ranges from 4 to 20 mg/l). Ramello's project and "LOW HISTAMINES" were to bring the wines in a completely natural way to contain histamine content below 0.5mg / liter. What has been achieved in years of research and experiment thanks to the collaboration with the oenologist Veglio Osvaldo.
The research "LOW HISTAMINES" has also been supported by some doctors, nutritionists and neurologists at SAPIENZA University from Rome and by Dr. Eugenio Franzero, a nutritionist working in Turin and Milan, whose recent statements are: - Histamine is a normal constituent of our body but in some patients predisposed high levels of histamine can lead to a whole series of symptoms and pathologies.
First of all, there are two different forms of histamine (istamine intolerance): an acquired histamine that is linked to the conjunctiva or an excessive introduction of histamine and then a geneticist hemisegyin (histamines intolerance) that is rarer. Both forms are extremely sensitive to histamine levels or the inability of the body to destroy histamine.
Above all, red wine is one of the major causes of histamine intake, along with seasoned cheeses, chocolate, etc.
The symptom of an excess of histamine may appear as migraine, headache, colitis syndromes, dermatitis, poor digestion in general.
Nowadays we can know how much istamine in the body but not the degree of patient intolerance, this is discovered by talking to the patient himself that with his symptoms and also making an ethological study can lead us to a diagnosis-.

A dare inizio alla ricerca vini "LOW HISTAMINES", circa 6 anni fa, è stato il consulente internazionale e esperto di vini Sebastiano Ramello, che all'inizio ha analizzato vini di aziende vinicole su tutto il territorio italiano, tra cui i vini dell'azienda vinicola Veglio Michelino & Figlio, scoprendo che alcuni vini della stessa azienda vinicola contenevano un quantitativo di istamine al disotto alla media (media contenuto di istamine in un vino rosso di qualità varia dai 4 ai 20 mg/l). Progetto di Ramello e della "LOW HISTAMINES" era quello di portare i vini ad avere, in modo completamente naturale, un contenuto di istamine al di sotto dello 0,5mg/litro. Cosa che si è riuscita ad ottenere in anni di ricerca e esperimenti grazie alla collaborazione con l'enologo Veglio Osvaldo.
La ricerca "LOW HISTAMINES" è stata anche supportata da alcuni medici, nutrizionisti e neurologi della università SAPIENZA di Roma e dal dottore Eugenio Franzero, nutrizionista che opera su Torino e Milano, del quale riportiamo alcune sue dichiarazioni fatte di recente: - L'istamina è un normale costituente del nostro corpo ma in alcuni pazienti predisposti i livelli di istamina elevati possono condurre a tutta una serie di sintomi e patologie.
Bisogna dire una cosa innanzitutto, esistono due forme diverse di istaminosi (intolleranza alle istamine): un istaminosi acquisita che legata all'accumulo o ad una introduzione eccessiva di istamina e poi un'istaminosi (intolleranza) su base genetica che è più rara. Entrambe le forme sono estremamente sensibili ai livelli di istamina o all'incapacità del corpo di distruggere l'istamina. 
Il vino sopratutto quello rosso è una delle maggiori cause di apporto di istamina, insieme ai formaggi stagionati, il cioccolato ecc..
La sintomatologia di un eccesso di istamina può comparire come emicrania, cefalea, sindromi colitiche, dermatiti, mal digestione in generale.
Ad oggi possiamo sapere quanta istamina c'è nel corpo ma non il grado di intolleranza del paziente, questo si scopre chiacchierando con il paziente stesso che con i suoi sintomi e facendone anche uno studio di etologico può portarci a una diagnosi-.
